Will Studd’s selected Stilton
Origin: Nottinghamshire, England
Milk Source: Cow
This cheese was specially made at the small Colston Bassett Dairy using a very traditional Stilton method. The curds in the cheese are slowly set with traditional animal rennet before being carefully ladled by hand into hoops to drain. Only small amounts of blue mould culture is used and ripening is not forced by time constraints. As a result the cheese has deliciously moist and creamy texture with a salty blue syrupy finish.
Colston Basset Dairy was formed in 1912 and is one of the smallest dairies in the Stilton-makers’ Association. Stilton is the only cheese in England that enjoys a legal name ‘protection’ and is made in just seven dairies in the Midland countries.
